Ingredients
For the Potato Casing
- 5 cups boiled and mashed potatoes
- 1/2 cup lentil paste
- 1/4 teaspoon asafetida
- 1 teaspoon ground black pepper
- Salt to taste
For the Egg Wash
- 5 large beaten eggs
- 2 cups bread crumbs
- Oil for deep frying
For the Meat Filling
- 1 lb ground lamb
- 1 cup grated onion
- 1 teaspoon garlic paste
- 1 teaspoon ginger paste
- 1 tablespoon hot chili paste
- 2 tablespoons soy sauce
- 1/2 cup minced scallion
- 1/2 teaspoon ground black pepper
- 2 tablespoons clarified butter
- Salt to taste
Cooking Instructions
- Prepare the Meat Filling:
- In a non-stick sauté pan, heat the clarified butter over medium heat.
- Add the grated onion, garlic paste, ginger paste, and hot chili paste. Sauté until light brown.
- Add the ground lamb, soy sauce, and black pepper. Stir continuously to ensure the meat browns evenly.
- Just before removing from the heat, stir in the minced scallions.
- Transfer the mixture to a large plate and allow it to cool.
- Prepare the Potato Casing:
- In a food processor, combine the boiled and mashed potatoes, lentil paste, asafetida, ground black pepper, and salt. Process until you achieve a thick, smooth mixture.
- Assemble the Potato Chops:
- With wet hands, take about two tablespoons of the potato mixture and flatten it on your palm to form a small cup.
- Place a tablespoon of the meat filling into the potato cup.
- Bring the edges of the potato cup together to enclose the filling, forming a ball. Repeat with the remaining potato mixture and filling.
- Coat and Fry:
- Season the beaten eggs and bread crumbs with salt and pepper.
- Dip each stuffed potato ball into the egg wash, then roll it in the bread crumbs to coat completely.
- Heat the oil in a deep fryer or a large pot to 350°F (175°C). Fry the stuffed potato chops a few at a time until they are golden brown and crispy.
- Drain on paper towels to remove excess oil.
- Serve:
- Serve the hot potato chops with tomato achar or your favorite dipping sauce.
