Potato Chop Potato Balls Stuffed with Meat

Ingredients

For the Potato Casing

  • 5 cups boiled and mashed potatoes
  • 1/2 cup lentil paste
  • 1/4 teaspoon asafetida
  • 1 teaspoon ground black pepper
  • Salt to taste

For the Egg Wash

  • 5 large beaten eggs
  • 2 cups bread crumbs
  • Oil for deep frying

For the Meat Filling

  • 1 lb ground lamb
  • 1 cup grated onion
  • 1 teaspoon garlic paste
  • 1 teaspoon ginger paste
  • 1 tablespoon hot chili paste
  • 2 tablespoons soy sauce
  • 1/2 cup minced scallion
  • 1/2 teaspoon ground black pepper
  • 2 tablespoons clarified butter
  • Salt to taste

Cooking Instructions

  1. Prepare the Meat Filling:
    • In a non-stick sauté pan, heat the clarified butter over medium heat.
    • Add the grated onion, garlic paste, ginger paste, and hot chili paste. Sauté until light brown.
    • Add the ground lamb, soy sauce, and black pepper. Stir continuously to ensure the meat browns evenly.
    • Just before removing from the heat, stir in the minced scallions.
    • Transfer the mixture to a large plate and allow it to cool.
  2. Prepare the Potato Casing:
    • In a food processor, combine the boiled and mashed potatoes, lentil paste, asafetida, ground black pepper, and salt. Process until you achieve a thick, smooth mixture.
  3. Assemble the Potato Chops:
    • With wet hands, take about two tablespoons of the potato mixture and flatten it on your palm to form a small cup.
    • Place a tablespoon of the meat filling into the potato cup.
    • Bring the edges of the potato cup together to enclose the filling, forming a ball. Repeat with the remaining potato mixture and filling.
  4. Coat and Fry:
    • Season the beaten eggs and bread crumbs with salt and pepper.
    • Dip each stuffed potato ball into the egg wash, then roll it in the bread crumbs to coat completely.
    • Heat the oil in a deep fryer or a large pot to 350°F (175°C). Fry the stuffed potato chops a few at a time until they are golden brown and crispy.
    • Drain on paper towels to remove excess oil.
  5. Serve:
    • Serve the hot potato chops with tomato achar or your favorite dipping sauce.
