Kwati Recipe: Spiced Mixed Bean Soup

Ingredients:

  • Mixed Beans:
    • 2 cups mixed beans (such as kidney beans, black-eyed beans, chickpeas, soya beans, mung beans, green beans, black beans, white beans)
  • Spices and Aromatics:
    • 1/2 teaspoon jwanu (lovage seeds)
    • 1 teaspoon fennel seeds
    • 1 teaspoon mustard seeds
    • 1 tablespoon curry powder
    • 1 tablespoon garlic, minced
    • 1 tablespoon ginger, minced
    • 3 fresh red chilies, minced
    • 1/2 teaspoon turmeric
    • 2 cups onion, chopped
    • 2 cups tomatoes, chopped
    • 2 cups red bell pepper, chopped
    • 4 cups vegetable broth or water
    • 3 tablespoons cooking oil
    • Salt and pepper to taste
    • 2 tablespoons fresh cilantro, finely chopped for garnish

Cooking Instructions:

  1. Prepare the Beans:
    • Soak the mixed beans in a large bowl of water overnight.
    • Drain and rinse the beans thoroughly.
    • Cover the beans and leave them in a warm place for 2-3 days to sprout. The length of the sprouts can be adjusted to your preference.
  2. Cook the Base:
    • Heat 3 tablespoons of cooking oil in a large saucepan over medium heat.
    • Add jwanu, fennel seeds, and mustard seeds to the hot oil. Fry until the seeds turn light brown and release their aroma.
    • Stir in the sprouted beans and cook for about 2 minutes, allowing them to absorb the spices.
  3. Add Vegetables and Spices:
    • Mix in the chopped onions, minced red chilies, curry powder, garlic, ginger, and turmeric. Stir for 2 minutes, ensuring that the beans are well-coated with the spices.
    • Add the chopped tomatoes and red bell pepper. Pour in the vegetable broth or water and season with salt and pepper.
  4. Simmer the Soup:
    • Bring the mixture to a boil, then reduce the heat and let it simmer gently.
    • Cook until the beans are tender and the soup has reached your desired consistency. This usually takes around 20-30 minutes.
  5. Garnish and Serve:
    • Garnish the soup with finely chopped fresh cilantro.
    • Serve hot, ideally with a side of rice for a complete meal.
