- 1 teaspoon mustard seeds
- 1 tablespoon curry powder
- 1 tablespoon garlic, minced

- 3 fresh red chilies, minced
- 1/2 teaspoon turmeric
- 2 cups onion, chopped
- 2 cups tomatoes, chopped
- 2 cups red bell pepper, chopped
- 4 cups vegetable broth or water
- 3 tablespoons cooking oil
- Salt and pepper to taste
- 2 tablespoons fresh cilantro, finely chopped for garnish
Cooking Instructions:
- Prepare the Beans:
- Soak the mixed beans in a large bowl of water overnight.
- Drain and rinse the beans thoroughly.

- Add the chopped tomatoes and red bell pepper. Pour in the vegetable broth or water and season with salt and pepper.
- Simmer the Soup:
- Bring the mixture to a boil, then reduce the heat and let it simmer gently.
- Cook until the beans are tender and the soup has reached your desired consistency. This usually takes around 20-30 minutes.
- Garnish and Serve:
- Garnish the soup with finely chopped fresh cilantro.
