Ingredients

For the Wild Boar:

  • 3 lbs. wild boar with fatty skin (pork can be substituted)

For the Rub:

  • 2 tablespoons curry powder
  • 1 teaspoon turmeric
  • 1 teaspoon chili powder
  • 1 teaspoon timur (Szechuan pepper)
  • 1/2 teaspoon grated nutmeg
  • Salt and pepper to taste

For the Choila Marinade:

  • 4 tablespoons mustard oil
  • 1 tablespoon cumin seeds, toasted
  • 5 red chilies, julienned
  • 3 cloves garlic, halved
  • 1-inch ginger, sliced
  • 1/2 teaspoon turmeric
  • 1/4 teaspoon asafetida
  • Salt and pepper to taste

For the Garnish:

  • 1 teaspoon fenugreek seeds
  • 10 cloves garlic, thinly sliced
  • 2 tablespoons mustard oil
  • 1/2 cup green onions, cut into 1-inch lengths

Cooking Instructions

  1. Prepare the Meat:
    • Wash the wild boar thoroughly.
    • Boil in salted water for 15-20 minutes, then drain.
    • Rub the meat with the rub ingredients and set aside for 10 minutes.
    • Smoke-grill until the skin is crispy.
    • Cut into 1/2-inch cubes, keeping the crispy skin attached.
  2. Prepare the Choila Marinade:
    • Blend cumin seeds, chilies, garlic, ginger, and turmeric with 2 tablespoons of oil to form a smooth paste.
    • In a bowl, mix the choila paste with the meat cubes.
    • Gradually pour in the remaining 2 tablespoons of oil, tossing to coat the meat thoroughly.
  3. Garnish:
    • In a non-stick pan, heat 2 tablespoons of oil.
    • Add fenugreek seeds and cook until they turn dark.
    • Add garlic slices and fry until light brown.
    • Pour the oil mixture over the marinated meat.
    • Add green onions and toss well.
  4. Serve:
