What is Chatamari?

Chatamari is a traditional Newari dish often referred to as “Newari Pizza.” This versatile dish comes in various forms, including Egg Chatamari, Keema Chatamari, and Plain Chatamari. Here, we’ll explore the mouthwatering Keema Chatamari with Egg.

Ingredients

  • For the Batter:
    • 2 cups rice flour
    • 3/4 cup water (adjust as needed)
  • For the Topping:
    • 4-6 eggs
    • 1 cup minced meat (chicken or buffalo)
    • 1/4 cup finely chopped fresh coriander
    • 1 teaspoon cumin powder
    • 1 teaspoon coriander powder
    • Salt to taste
    • 1/2 onion, finely chopped
    • 1 teaspoon red chili powder
    • 1 serrano chili pepper, finely chopped
    • 1 teaspoon Schezwan pepper (or regular pepper if unavailable)
    • 1 tablespoon garlic-ginger paste
    • 1 teaspoon turmeric powder
    • 4 tablespoons shredded cheese
    • 1 tomato, diced
    • 1 tablespoon oil per chatamari

Instructions

Prepare the Batter:

  1. Mix the Batter:
    • In a bowl, combine the rice flour and water to form a thin batter. Add water gradually, ensuring the batter is not too watery.

Prepare the Topping:

  1. Mix the Topping Ingredients:
    • In another bowl, mix the minced meat, chopped onion, cilantro, cumin powder, coriander powder, turmeric powder, chili powder, pepper, salt, garlic-ginger paste, serrano chili, and two eggs until well combined.

Cook the Chatamari:

  1. Heat the Skillet:
    • Heat a tablespoon of oil in a non-stick skillet over medium-high heat. Ensure the skillet has a lid.
  2. Pour the Batter:
    • Pour the rice flour batter into the skillet to make a 6-inch circle, similar to a pancake.
  3. Add the Topping:
    • Spread a portion of the meat mixture evenly on top of the batter.
  4. Add the Egg and Cheese:
    • Break a whole egg on top of the meat mixture.
    • Sprinkle about a tablespoon of shredded cheese over the egg.
