Ingredients
- 2 cups mixed beans (kidney beans, black-eyed beans, chickpeas, soybeans, mung beans, green beans, black beans, white beans, red beans)
- 1 lb. lamb (or chicken, or turkey), cut into small pieces
- 1/2 teaspoon jwanu (lovage seeds)
- 1 teaspoon fennel seeds
- 1 teaspoon mustard seeds
- 1 tablespoon curry powder
- 1 tablespoon minced garlic
- 1 tablespoon minced ginger
- 3 fresh red chilies, minced
- 1/2 teaspoon turmeric
- 2 cups chopped onion
- 2 cups chopped tomato
- 4 cups broth or water
- 3 tablespoons cooking oil
- Salt and pepper to taste
- 2 tablespoons finely chopped cilantro (for garnish)
Preparing the Sprouted Beans
- Soak the Beans:
- In a large bowl, cover the mixed beans with water and soak them overnight.
- Drain the water and rinse the beans thoroughly.
- Sprout the Beans:
- Place the drained beans in a bowl and cover it. Set the bowl in a warm place to allow the beans to sprout.
- Allow 2-3 days for sprouting, depending on the desired length of the sprouts.
Cooking the Lamb Quantee
- Heat the Oil:
- In a large saucepan, heat the cooking oil over medium heat.
- Add jwanu (lovage seeds), fennel seeds, and mustard seeds. Fry until they are light brown and aromatic.
- Brown the Meat:
- Add the lamb pieces to the pan and brown them well, ensuring they are seared on all sides.
- Add the Sprouted Beans:
- Add 3 cups of the sprouted beans to the saucepan and fry for about two minutes, stirring frequently.
- Sauté the Aromatics:
- Add the chopped onion, minced red chilies, curry powder, minced garlic, minced ginger, turmeric, salt, and pepper.
- Fry until the onions are slightly brown and all the spices are well mixed.
- Incorporate Tomatoes and Broth:
- Add the chopped tomatoes and broth (or water) to the bean and meat mixture.
- Season with additional salt and pepper to taste.
- Simmer the Quantee:
- Bring the mixture to a boil, then reduce the heat and let it simmer on low until the meat and sprouts are tender, and the soup reaches the desired consistency.
- Garnish and Serve:
- Garnish the Lamb Quantee with finely chopped cilantro.
- Serve hot with a side of rice.
